Healthy lunch Cauliflower fried rice

Ingredients
  • 1/4 cup onion diced
  • 1/4 cup cup carrots diced
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp ginger
  • 1/8 tsp garlic powder
  • 1/2 cup cauliflower, grated
  • 2 eggs, beaten
  • 1/4 cup Red bell pepper
  • 1/4 cup Yellow bell pepper

Instructions

In an large skillet, cook the onion and ringer peppers in olive oil with ginger for around 1 minute on medium warmth.Add carrots ,cook and cover for around 7-9 minutes until the point that carrots is cooked. Reveal and add the spices and blend well. add the cauliflower and cook for around 5 minutes.Spread the blend towards the edge of the pan, making a well in the inside. Pour the beaten eggs into the well, mixing just the eggs until the point when they are cooked at that point blend in. Remove the warmth, and serve it .
